In the past, I had always used store-bought stock cubes. I recently learned how to butcher a chicken, which saves a lot of money when compared to buying chicken portions. The course went on to explain what went into store-bought stock cubes: loads of salt and additives. This simple Chicken stock recipe is easy to prepare and has no additives.

Preparation: 10 minutes, cooking up to 24 hours

 Ingredients

1 chicken carcass

1 large or 2 medium onions, peeled and quartered

2 carrots, chopped into large batons

3/4 sprigs of fresh rosemary

3/4 sprigs of fresh parsley

1 litre of boiling water

Pinch of celery salt

Carrots, Onions and Herbs

Chicken carcass, onions, carrots, and saved chicken thigh bones.

Method

Add all the ingredients to your slow cooker and cook on low for up to 24 hours.

Notes

When cooking other chicken dishes that require the chicken to be off the bone, if you are skinning and deboning yourself, you can freeze the chicken thigh and drumstick bones to use along with the chicken carcass in the main recipe.
