Nashville Rub Chicken Wings
Supposedly, a Nashville housewife invented the original Nashville rub recipe after discovering her husband was having an affair in the early 1900s. She wanted to make his food so hot that it would give him a heart attack. The husband loved the recipe, patented it, and became a millionaire. My American side of the family comes from Tennessee, where chicken and pork chops are everyday staples. Like many spice mixes, mine has evolved.

Prep: 5 minutes, Cooking: 15 minutes depending on cooking method
Ingredients
2 Tbsp of hot paprika
2 Tbsp of smoked paprika
1 Tbsp of sugar
1/2 tsp of salt
1/2 tsp of black pepper
1/2 Tbsp of Onion powder
1/2 tsp of Chipotle powder
2 Tbsp of melted butter (I use spreadable butter and microwave it for a few seconds)
8 Chicken wings

Method
After mixing all the ingredients (except the chicken wings) mix 2 Tbsp of the rub mixture with the melted butter, making a slurry paste. Use a basting brush to evenly spread the paste over you chicken wings.

Whilst you could air-fry or grill the chicken immediately, I often place the chicken in a food bag and allow it to marinate in the fridge for a few hours. Preheat your air-fryer to 200 Celsius, the cook your chicken wings for 15 minutes.
Notes
Often chicken wings have tips still attached; I remove them with sharp kitchen scissors and save them for chicken stock.
You can save any unused spice in an airtight container.
You could swap the onion powder for garlic powder. Or use both.
